The BEST Lentil Soup Ever
Lentils are so good for you and this vegan recipe is the best way to have them. I love to have it with a baked potato, and chopped spinach on top gives a little extra greens. I serve this with cornbread or crusty French bread. This is comfort food at its best. Enjoy!
Ingredients
- 6 oz lentils (1/2 package)
- 1 potato finely diced
- 2 carrots finely diced
- 1-2 celery stalks finely diced
- Tomato sauce
- Veggie broth
- Salt to taste
- Juice from half of a lemon
- 1/4-1/2 cup cilantro chopped
- 1 onion finely chopped
- 1 tomato chopped
- 2 cloves garlic minced
Instructions
- Wash lentils and start to cook in water per package directions
- While they cook, dice and add potato and carrots to the lentils
- Cook until softened
- Once the water has started evaporating and everything is soft, add enough stock (veggie or chicken) and 1 small can of tomato sauce
- Continue to cook lentils, potatoes, and carrots until the liquid has thickened to a creamy texture
- While the lentils are cooking, sauté the cilantro, onion, celery, garlic, and tomato (sofrito)
- Add sofrito to lentils, along with salt to taste and juice from half a lemon
