The BEST Lentil Soup Ever

Lentils are so good for you and this vegan recipe is the best way to have them. I love to have it with a baked potato, and chopped spinach on top gives a little extra greens. I serve this with cornbread or crusty French bread. This is comfort food at its best. Enjoy!


  • 6 oz lentils (1/2 package)
  • 1 potato finely diced
  • 2 carrots finely diced
  • 1-2 celery stalks finely diced
  • Tomato sauce
  • Veggie broth
  • Salt to taste
  • Juice from half of a lemon
  • 1/4-1/2 cup cilantro chopped
  • 1 onion finely chopped
  • 1 tomato chopped
  • 2 cloves garlic minced


  • Wash lentils and start to cook in water per package directions
  • While they cook, dice and add potato and carrots to the lentils
  • Cook until softened
  • Once the water has started evaporating and everything is soft, add enough stock (veggie or chicken) and 1 small can of tomato sauce
  • Continue to cook lentils, potatoes, and carrots until the liquid has thickened to a creamy texture
  • While the lentils are cooking, sauté the cilantro, onion, celery, garlic, and tomato (sofrito)
  • Add sofrito to lentils, along with salt to taste and juice from half a lemon
