Delicious and Easy Gluten Free Spanakopita
I used to make Spanakopita on the regular, but after two of my kids were diagnosed with celiac, our household became gluten-free. Making my own filo dough was not in my plans. Neither was using homemade puff pastry. Then I discovered GeeFree gluten-free puff pastry and this delicious and dasy gluten-free Spanakopita is back in rotation. Oh, how I missed you, but welcome back!This recipe is quick and easy (not so with filo dough, which requires time, finesse, and a lot of butter). Ingredients
- 1 package (approximately 6 ounces of pre-washed spinach rough chopped
- 5 eggs
- 1 package 6 ounces crumbled feta cheese or 1 block (8 ounces) of block feta, crumbled
- 1 16- ounce container of cottage cheese
- 1 onion chopped and sauteed in 1 Tablespoon olive or avocado oil
- 3/4 teaspoon salt
- 1 sheet prepared gluten-free puff pastry I used GeeFree. Other brands include Schar and Jus-Rol (only available in the UK). Regular pre-prepared puff pastry can also be used for this recipe
Instructions
Spanakopita Filling
- Dice onion and sauté in one tablespoon of olive or avocado oil.
- Meanwhile, rough chop the spinach and put it in a large bowl.
- Add the sautéed onions, which will wilt the spinach slightly. Mix well.
- Add the eggs, feta cheese, cottage cheese, and salt. Mix well, making sure the feta is crumbly enough and well distributed.
- Grease a 9x12 baking pan.
- Pour spinach mixture into pan.
Prepare the Pastry
- Allow one section of GeeFree gluten-free pastry to soften.
- Dust surface with gluten-free flour. Roll out pastry until thin, but manageable.
- Fold into thirds, sprinkle with flour, and roll out again.
- Repeat this for three or four rounds, total, to create layers.
Final Steps
- Carefully lay the rolled out pastry on top of the filling in the baking sheet.
- Brush with an egg wash.
- Bake at 375° for 35-40 minutes, or until pastry is golden brown and eggs are cooked.
